If you’re lucky and live in an area with farmer’s markets, you can easily find some amazing purple vegetables. You’ve probably heard that it is best to eat “the rainbow”. So eating a variety of fruits and vegetables in all different colors gives you the best chance at getting all the nutrients you need to support your health. Here are some amazing purple vegetables that you may have overlooked.
Purple Potatoes
Antioxidants help protect your cells from free radical damage and can help reduce inflammation. You will feel your best if you can keep any inflammation at a minimum. Purple potatoes have four times the amount of antioxidants than Russet potatoes.
Purple Carrots
Making sure you are getting plenty of fiber in your diet will help you move toxins out of your body through your intestines. Eating vegetables, like carrots, is a great way to do this. Regular orange carrots are a low calorie snack that can help you feel full. They also contain 73% of your daily minimum requirement of vitamin A. There is a concern though, that carrots are not particularly high in fiber. In fact, they contain more sugar than fiber. Purple carrots tip the scales nutritionally because they are particulary rich in antioxidants.
Purple Cauliflower
As you might suspect, purple cauliflower is a nutrition power house. It contains 15% more antioxidants than kale. The purple color comes from the large amount of the powerful antioxidant anthocyanin. Like many other non-starchy vegetables, it is low in calories and is composed of mostly water. You can eat it just like you would white cauliflower. Eating any color of cauliflower can help you maintain a healthy weight because it helps you feel full longer.
Purple Asparagus
You may like the taste of purple asparagus more than green because it is slightly sweeter. It gets its purple color fron the same antioxidant as other puple vegetables. This means it contains more inflammation fighting compounds. You can eat purple asparagus like any other type of asparagus. All asparagus is really great for supporting your gut health because they help feed the good bacteria.
Purple Brussel Sprouts
You may have a hard time finding them, but they are worth the effort. Purple Brussel sprouts are sweeter than their green cousin. Plus with the extra antioxidants from being purple, they are even better for you. They take less time to cook because the leaves aren’t packed as tightly as green Brussel sprouts.
